# What You’ll Need:

→ Steak and Marinade

01 - 1 pound sirloin steak, cut into 1-inch cubes
02 - 1 tablespoon olive oil
03 - 1 teaspoon salt
04 - 1/2 teaspoon black pepper
05 - 1/2 teaspoon smoked paprika

→ Potatoes

06 - 1 pound baby potatoes, quartered
07 - 1 tablespoon olive oil
08 - 1/2 teaspoon salt
09 - 1/4 teaspoon black pepper

→ Garlic Butter

10 - 3 tablespoons unsalted butter
11 - 4 cloves garlic, minced
12 - 1 tablespoon fresh parsley, chopped
13 - 1/2 teaspoon dried thyme

# How To Make It:

01 - Combine sirloin cubes with olive oil, salt, black pepper, and smoked paprika in a medium bowl. Mix thoroughly and set aside to marinate while preparing potatoes.
02 - Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add quartered baby potatoes, season with salt and black pepper, and cook, stirring occasionally, until golden brown and tender, about 12–15 minutes. Transfer potatoes to a plate and cover to keep warm.
03 - Raise skillet heat to high. Arrange steak cubes in a single layer, searing undisturbed for 2 minutes. Flip and cook an additional 2–3 minutes until well-browned and cooked to your preference. Set steak aside.
04 - Lower heat to medium and add unsalted butter to the skillet. When melted, add minced garlic and dried thyme. Sauté for 30 seconds until fragrant.
05 - Return potatoes and steak to the skillet. Toss gently in the garlic butter over medium heat until evenly coated and heated through, about 1–2 minutes.
06 - Sprinkle chopped fresh parsley over the dish before serving.

# Expert Advice:

01 -
  • The garlic butter seeps into every nook of the potatoes, making each bite feel extra special.
  • This dish is done in thirty minutes and makes it look like you tried way harder than you did.
02 -
  • If you overcrowd the steak, it stews instead of sears—a lesson I’ve learned the hard way when rushing.
  • Letting the potatoes get truly golden before pulling them from the pan makes all the difference in texture and flavor.
03 -
  • Dry your steak cubes with paper towels before marinating for the best browning.
  • Let the cooked steak rest on a warm plate for a minute so every bite stays juicy and tender.
