- Combine ground chicken, chopped onion, garlic, soy sauce, grated ginger, salt, and pepper in a large bowl. Mix thoroughly until all ingredients are evenly distributed throughout the meat.
- Divide the chicken mixture into 4 equal portions. Shape each portion into a uniform patty, pressing gently to compact without overworking the meat.
- Heat a grill or grill pan over medium heat. Lightly brush the cooking surface with olive oil to prevent sticking.
- Place patties on the preheated grill. Cook for 5 to 6 minutes on each side until fully cooked through and juices run clear. The internal temperature should reach 165°F. If adding cheese, place a slice on each patty during the final minute of cooking and cover to melt.
- While patties cook, place pineapple rings on the grill. Cook for 2 minutes per side until lightly caramelized and marked with grill lines.
- Place burger buns cut-side down on the grill for 1 to 2 minutes until golden brown and lightly crisped.
- Spread barbecue sauce on the bottom half of each toasted bun. Layer with lettuce, tomato slices, grilled chicken patty, caramelized pineapple ring, and thinly sliced red onion. Top with the upper bun half.
- Serve immediately while pineapple and patties are still warm. Accompany with sweet potato fries, coleslaw, or other desired sides.
